I called summit racing because I was interested in maxing out my whp naturally. I wanted to know what size and style piping I would need for the headers all the way back to the muffler. He totally did not know anything and said yeah just use ss piping to last longer and a high flow cat and he said you could run an open header and I said what do you mean by that and he said hold on a sec and i said ok and it disconnected. I called back again it was the same guy but he said hold on a sec and hung up again total dush.

Don't know if he meant it seriously or as a joke or not though because it's loud as fvck and since you just removed all of your exhaust components after your manifold you no longer have backpressure (or are street legal for that matter)...therefore loss of power/torque in your bottom end but more power up top.

If he meant it as a joke then just go with it, if he was serious then tell him to flake off because open headers is a complete joke on the street.

Making power is usually done as a system. There's really no "right" or "wrong" answer. If you're just looking for a gain in general over stock I'd say 2.5" is a good safe number. 2.75" even if you're planning to do much much more.

...Since we're only looking at NA street I'd say 2.75" would be good, 2.5" if you want more off the line torque.
