I cant find the rod length anywhere but wouldnt that be how the stroke is determined?
No.
There is a general proportion, but definitely not "determined".
For a specific stroke, the rod can be anything from 1.3 × the stroke length up to 2.5 × the stroke length, numbers between 1.7 and 2.0 are more common.
IIRC the 1MZ rod is 148mm, the rod listed in the source data is 154mm. If I'm correct the piston will simply crash the head - 6mm is way, way too much to compensate for.
Since you're reducing compression the dome shape and valve relief cuts will probably not matter - but they would certainly not match and this would be critical if the compression were higher.
If you call Wiseco you're going to get either Buffy the receptionist, or a salesman, both of whom will tell you "to read the catalog", or simply tell you that if it's for a different engine it won't work. You're not going to get and R&D engineer on the phone.
Have you examined the 1UZ pistons?
