If it smells like celery then it's antifreeze cooking. and from your description it would be heater core or a connection to it.
If it smells like something else, then the filter is your best bet.
Is it constant or just sometimes. A sulphur smell is common after gunning it. (There's a TSB for persistant instances of that.) But it's not your cat if it's constant.
Also... next time it's strong, stop and pop the hood. See if it's coming from the engine compartment.
