With the correct offset you can probably get a 18 x 8.5" wheel to work without rubbing. I have 18 x 8" wheels with a +40 mm offset with no problems at all. I recall there are folks out there with 19 x and 20 x 8.5" wheels with no rubbing problems either.
If you are lowered (or going to be lowered) that's another consideration you should look into.
