Will this combo work without rubbing?

18x7.5 48mm offset with 225/40/18s?

If not, what size wheel will work with that size tire? (I already have the tires, so need to find wheels for them)

Unfortunately for you, the tires are too small in diameter. You will make a larger gap in the wheel well.

I ran a 235/45R18 and they fit perfect.
